15384-01 - Lecture: Bioactive Compounds in Food Plants and Nutraceuticals 1 CP

Content Bioactive substances in food plants and their relevance for health: Polyunsaturated fatty acids, olive oil and the Mediterranean diet, glucosinolates in cabbage and other Cruciferous veretables, phytooestrogens, antioxidants, brain protecting compounds, chemoprevention, substances lowering cholesterol and glucose blood levels, Novel Foods, functional foods, nutraceuticals, superfruits.
Learning objectives - The students know the bioactive compounds contained in food plants and their pharmacological activities. They understand their significance for human health.
- They are familiar with the concepts of functional food, food supplements and novel foods. They know the regulatory aspects, important products on the market, and emerging botanical dietary supplements.
